This trout called sancheoneo in Korean is actually a masou salmon and while it is the same as the trout native to Korea, it is a land-lock type fish that does not go out to the seas and only lives in the river. It lives in the upstream of clean and cold rivers, and as it does not have the sandy-taste of freshwater fish, it is enjoyed raw as well.
Trout is rich in proteins and the unsaturated fatty acids DHA and EPA making it great for the brain development of children, while also helpful in preventing high blood pressure and various adult diseases, and also for anti-aging, fatigue-recovery and to have anti-cancer effects.

Trout hot pot rice is made by putting rice in a stone pot, taking just the meat of trout and placing it on top of the rice, and topped with radish, carrots, mushrooms and other vegetables. The radish gives it a good texture when swallowing and it is recommended to use just the soy sauce to enjoy the flavors of the hot pot rice. Also, the hot pot rice is cooked with trout broth, so it has a clean and savory taste compared to other hot pot rice. Some may think that trout hot pot rice will have a fishy smell, but it does not, and so those who do try it will be tempted to come back again for this.
